16/10/2024: J’ai déjeuné mardi 15 octobre 2024 et dîné le même soir et à nouveau ce soir mercredi 16 octobre 2024. La personne qui m’a accueilli mardi midi et l’autre qui m’a reçu chaque soir étaient très sympathiques. Le cadre est très agréable dans cette maison aux plafonds très hauts. C’est une adresse qui se mérite car elle est située dans la haute ville (le centre historique). Consommer son repas au calme, c’est agréable. Même s’il y a du monde, l’endroit n’est pas sonore. Après avoir parlé du cadre, évoquons le voyage gustatif et subtil des plats. Délicieux, avec une cuisson parfaite de la coquille Saint-Jacques en entrée. Une carte et une proposition d’entrée et de plat du jour équilibrée. Et l’on devine facilement que tout est préparé à la commande. Je cuisine et je sais faire la différence entre quelque chose qui a attendu en cuisine et un plat qui vient d’être élaboré après la commande. Une chose est sûre, quand je reviendrai à Granville, j’y retournerai et je ferai partager cette belle découverte à mes amis.

23/10/2025: Hello, since these sites are for freely expressing opinions about an establishment, I can say that I was a customer of this place, which, from my perspective, falls short of quality standards—and it's a 4-star hotel for a reason. Everyone will think it's normal for a former employee to write these reviews based on misunderstandings within the company, but the problem here is much bigger than a customer might perceive, especially concerning the mental health of my former coworkers, students, and apprentices. I had a very strange experience working there, the most unpleasant in my more than 10 years working in the kitchen. The workers who "manage" this place know absolutely nothing about the hotel industry. The management is run by a group of people who only sought to abuse others to climb the ladder and trample on an entire team that is eager to work. What's more, some of my colleagues and apprentices are more capable than those same people who abuse them. This hotel is stuck in a vicious cycle; there are no principles or morals on the part of those "in charge." They only hire people who agree to their demands without considering whether it's right or wrong, and they're rarely prudent when it comes to maintaining the highest quality standards. It's not surprising, given how they make people (students and apprentices) cry and subject them to psychological abuse, taking advantage of their need to study and work. If a student or employee isn't convenient, they exploit their efforts before their probationary period ends, firing them without regard for the effort and dedication they've put into the company. It doesn't matter what happened to me because I understand that people like that aren't worth having around. But I hope this ends because it discourages young people with dreams of personal growth and entering the workforce to build a good lifestyle for a better future. People leave disillusioned and lose the desire to pursue their dreams because of things like what happens in this place. More than four chefs have come and gone in a year, leaving them without a responsible and qualified chef to lead the apprentices. This is a huge responsibility, given the potential for accidents involving young people. Something is clearly wrong with that place, and it's appalling. Above all, be careful about eating there because the food is truly awful. Take precautions. The cook has no experience and no culinary knowledge; he's incapable of creating new dishes and relies solely on frozen products and plating. This person is responsible for those photos from their MEP (Message and Presentation) from when I worked there. He cleans spoons with his mouth and uses them to serve food, and they choose to keep people who work this way, without any changes to the work, the quality, or even the concept of a kitchen adapted to a "four-star" hotel. It's astonishing. I hope things don't get worse, as the chef who replaced me just left after only three months. Unbelievable. I apologize for this harsh comment, but it's honest. I hope they feel some shame for their mistreatment.

11/08/2025: We stayed two nights at this establishment. The room was adequate for the price. Clean. The problem with this establishment is the owner. To avoid any further issues for him, I took the liberty of mentioning to him privately that the individual Nutella packets on the breakfast buffet had expired in March (five months prior). He took it very badly (as he does with all negative reviews). This gentleman searched my Google business listing and left me a very bad review solely to lower my overall rating. This is unacceptable and fabricated, as we have never had a professional relationship. It's malicious and petty. Rest assured, sir, I am well aware of the difference between "best before" and "use by" dates, as I have worked with local authorities for 17 years and am in regular contact with the DGCCRF (French Directorate General for Competition Policy, Consumer Affairs and Fraud Control), which manages health and safety services, so I am well-versed in these matters. Who is the bad professional here? The customer who politely points out an expired product to the owner? Or the owner who replies that it's not a big deal with that type of product? True enough, but when you're welcoming the public, you have a duty to avoid this. Who has the better ethics and consideration? There you have it, I won't waste any more time and will let you read the response, which will undoubtedly be watered down with lies, like some of the ones in your reply on Booking.com. Although I hadn't mentioned expired products.

02/06/2024: Excellent restaurant, le Chef a du talent, les associations pour confectionnner les plats sont originales et subtiles du grand art, qui peut justifier le prix. L'accueil est sympathique, je serais plus critique sur le service ainsi que la décoration. Le service est trop rapide, pas le temps de boire tranquillement l'apéritif et déguster les amuses-bouche. On enchaîne l'entrée et faire goûter le vin, il y peu de monde, ce midi, on veut finir de bonne heure. La décoration de la table est minimaliste, c'est certainement un choix d'avoir une présentation dépouillée, mais ma critique principale sont des serviettes de table en papier bas de gamme que l'on trouve dans tout les supermarchés, dommage pour un établissement gastronomique. Il y a une terrasse, mais je précise qu'elle est non fumeur, un choix des propriétaires.
