06/05/2026: A truly memorable lunch at Le Bistro d’Hervé in old Agde — a Michelin-recognized kitchen (Bib Gourmand, two Fourchettes) that absolutely lives up to the billing. The meal opened with a complimentary seafood tapenade served alongside warm, herb-dusted crostini — an unexpected and gracious touch that set the tone. I followed with the avocado and shrimp: presented in a crisp golden crust with wasabi mayonnaise, spring onions, and lime. Bright, balanced, and quietly inventive. Then the main event — a thick, beautifully seared pork chop over silky mashed potato, finished with sautéed greens, shallots, and a deeply reduced jus I could have eaten by the spoonful. A minerally glass of local white wine was the perfect counterpoint, sharp enough to cut the richness without competing with it. Chef Hervé Dos Santos is doing serious, soulful, forward-thinking cooking in this small Languedoc town. If you can make your way to 47 rue Brescou, you will not be disappointed.

A perfect welcome despite our lateness, professional service, and the arrival of hot dishes served by the chef, who is both warm and talented. We had an excellent evening, and our taste buds were delighted too. We'll definitely be back on our next trip to Montpellier.

A true delight. Thank you to the chef for bringing us dessert and offering us wine. Something I feel is no longer common in France today. A truly French restaurant! I highly recommend this restaurant because it is, and I say this from the bottom of my heart, simply perfect 🥰

19/04/2026: Sunday, April 19, 2026 - 1:15 PM Never seen a McDonald's order so well done! I don't know who was in the kitchen at the time, but the order came out like in a commercial, I've never seen anything like it. I'm so used to it being rushed (almost always something being forgotten), I want to emphasize and thank the service, which was PERFECT. Give the employees who prepared this order a promotion! 😂

15/02/2026: It was valentine's day, it was supposed to be great. In the end it was just good but nowhere near great. The food was ok, but the services were extremely slooooow. I had to go back and forth two times to get them to come and take our order. Anyway the third time worked like a charm and we were finally able to make our order. Then our food arrived half an hour later. Tbh I was so hungry by then that I would have been able to eat anything. We had a planche mixte which we were told would have some truflle ham but again it was not there. Nevertheless, the wine was great and we were able have a good time!

The setting is lovely thanks to the Jacques Cœur basin. The cuisine is simple, but always good, as you'll appreciate the generous portions. I recommend it. The food is excellent; you can taste the quality and care that goes into each dish. Moreover, the prices are quite reasonable, which is a real bonus. The atmosphere is also very pleasant; the setting is elegant, and you feel comfortable there, whether you're with friends or family. I highly recommend it!
