I've eaten many times at Bouillon République in Paris; it's cramped, noisy, and full of complaints about the food. Here, the cuisine is refined and excellent; everything is perfectly balanced. I hope that word of mouth brings you many more happy customers.

02/04/2026: Important to know... The recipient of a gift certificate is not treated equally to other customers. Indeed, even if the cost of a meal gifted by a third party is the same as that of another customer, it cannot be used on Saturday evenings, Sunday lunchtimes, or public holidays. A gift certificate can only be used at the restaurant owner's discretion, meaning only to "fill tables" when needed. This practice is completely unfair. When purchasing a gift certificate, the downgrading of the future recipient is not mentioned at all... This practice is outlined in the five-page terms and conditions... Very disappointing and upsetting for a recipient who received this gift certificate... Hello Mr. Auvray, I am writing in response to your incomplete reply... Indeed, if, as you describe, the tone "rose" during our conversation, it is simply because the person you refer to as a "family member" was very discourteous towards me. Arrogant and sarcastic. This was because they lacked any argument to justify the downgrading I mentioned. You will grant me that, having yourself tried several times, with subtle nudges of the elbow, to put them in their place. Furthermore, I want to emphasize that you did not invite me to leave... I left, realizing that you were stubbornly clinging to your established and completely unfair policy, contrary to what you write... You will notice that, out of courtesy and appreciation for the absolutely divine meals you offer your clientele, I did not mention these facts in my initial message, which was solely intended to warn future purchasers of gift certificates. It seemed very important to me to know... I believe this conversation no longer needs to be prolonged... everything has been said. I wish you a pleasant day and look forward to seeing you again soon, at your convenience, with my gift certificate in hand, to enjoy your much-loved cuisine.

29/03/2026: Thank you for saving our evening. For my parents' 25th wedding anniversary. After waiting an hour without being served at another restaurant in the area, we arrived at your place without a reservation. Despite the lack of space, you managed to quickly arrange a spare table for us so we could still be accommodated. The welcome and service were perfect, fast, and pleasant. The food was very good! The staff were kind and patient, taking excellent care of us after the "emotional rollercoaster" at the other establishment (but they were also attentive to all the other tables). We know where to book directly next time 🙂

Three choices of starters, main courses, and desserts, which bodes well for the quality of the ingredients and the originality of the dishes. Subtle and surprising combinations: Turbot andouillette sausage with chocolate and avocado. It's delicious and beautifully presented. A warm welcome and friendly service. Very good wine. Bravo! We'll be back.

From the appetizer to the dessert, everything was perfect, a culinary delight with every bite. A special mention to the waitress who was incredibly attentive.

I was on a business trip with the Hôtel des Ducs, and I admit I was apprehensive because, generally, when the hotel is different from the restaurant, you're often treated like an afterthought. But this was a wonderful surprise; I highly recommend it.

Still perfect, a restaurant where you're torn between several starters, main courses, and desserts... the flavors are subtle and sophisticated, and the presentation is also very refined.
