I've eaten many times at Bouillon République in Paris; it's cramped, noisy, and full of complaints about the food. Here, the cuisine is refined and excellent; everything is perfectly balanced. Three choices of starters, main courses, and desserts, which bodes well for the quality of the ingredients and the originality of the dishes. Subtle and surprising combinations: Turbot andouillette sausage with chocolate and avocado. It's delicious and beautifully presented. A warm welcome and friendly service. Very good wine. Bravo! We'll be back.
