09/05/2024: A place right next to the castle, with easy access and a good walk through the town. It offers a la carte and two menus, one economical and the other more expensive but they are about €25. Fast and very friendly service.
We tried the Cassoulet which is typical from there, and very delicious with a strong (consistent) flavor.

It is essential to reserve a table in advance as the place is small and crowded.
I am not giving 5 stars for the service because it became clear that the "natives" were given preference even if they had not booked a table. For the rest of the service, everything is excellent too.
04/04/2024: Famous creperie in Carcassone...and which appears referenced on almost all the city's websites. That makes reservations mandatory. You can do it by email without having to call if you go from Spain. I recommend doing it several days in advance. For dinner there are 2 seatings: 7:00 p.m. or 8:30 p.m. They have an almost militarized control in this aspect, since the first shift must end in time for them to prepare tables and let in all of us waiting for the second shift...while we waited to enter, we joked in case a family was late: -)
Once inside, they serve you very well and the crepes are delicious. The price is average for the area, maybe a little high.
I would repeat again.

The meal was very good, I recommend!
25/04/2024: Very pleasant place, copious dishes including the cassoulet which is excellent. Despite our large group (group of 10), we were served quickly and the waitress was very pleasant. In short, I highly recommend this restaurant in the heart of the citadel of Carcassonne which will serve you a very good Cassoulet. However, I recommend booking in advance to ensure a spot.

03/04/2024: Ended up on the terrace of Le Trouvere during a walk through beautiful Carcassonne. Nice place, great food. Unfortunately, the toilet was not fresh and the man behind the counter was very disinterested. Shame.
01/04/2024: I have been going to this restaurant for years but over the years the welcome and general quality has deteriorated.
Last visit on Easter weekend with a terrible welcome since the owner makes NO effort - if you don't take a table the next ones will. Don't even think about a reservation - you had to stand 40~45 minutes in front of the door waiting. Morality she wanted to make us eat outside in the open wind and God knows if there are any in Carcassonne instead of giving us a table of 2 and one of 4. I'm skipping to sketch because of the dog which wasn't even the welcome outside (seeing eye dog). In short, we found better elsewhere without forcing…

30/03/2024: No interest. Tourist trap. A frankly average burger. Cold, dry bread. Undercooked chicken. Mussy frozen fries. So we didn't even try dessert or coffee.
Our server was quite pleasant. The only positive point is that it looks more like a mediocre canteen than a restaurant, especially since the prices are high compared to the quality served at the table.

The cuisine is exceptional, a big thank you to the chef.
The welcome with a smile, the service is perfect, thank you very much to the waitresses.
Don't go to Carcassonne without stopping at this restaurant.
We will gladly come back !
24/03/2024: What a desappointment ! I had lunch at this restaurant two years ago and it was great.
Now it's a disaster! The cassoulet is very fatty and without any flavor. The restaurant has become soulless. The service is cold and fast. And prices have skyrocketed!!!
And a special mention for the toilets, ridiculously small and with a very low ceiling.
One might wonder how this restaurant got a star...
In short, a very bad experience, I won't come back.
