04/04/2024: Our lunch was far better than we anticipated being in such a tourist area. We tried the three course lunch. Spectacular. Auberge de Dame Carcas serves a great cassoulet. Our salads were fresh. The pate was terrific. We had very nice service even during a frenetic lunch rush. Both the patio and dining room are nice. Totally enjoyed it.

02/04/2024: The check in was smooth, the location is amazing and we were really glad to see free parking.
The rooms provide extreme silence and we woke up to singing birds.

14/04/2024: Déçu du service. Nous avons eu les aperos après avoir été servi des entrées. Le plat, brochette de poulet avec une viande pas cuite, on le fait remarquer à la serveuse sa réponse "je ne suis pas cuistot". Et pour finir le vin rouge en pichet avec un arrière goût pas bon, nous n'avons pas pu le boire.
Vraiment déçu pour un restaurant au cœur de la cité de carcassonne.
13/04/2024: Very good while slightly frustrating. On the plus side they offer good quality food at a fair price in the middle of the walled city where you might not expect either. On the other hand I'd looked through countless reviews going years back and was unsurprised to find my cod overcooked and served on a cold plate. It seems to be a tradition, but both issues are so easy to fix. My wife's cassoulet was excellent and my son's steak decent. Lovely French onion soup too, and good service.

01/04/2024: A very safe option to eat, the price is within the range offered by other restaurants in the city, in my case I ordered menu 2 (€29.50) and a glass of white wine (€5) the starter (salmon salad smoked) very good, adequate portion, fresh, cassoulet dish with sausage and duck leg, tasty and filling, a little dry for my taste, but well prepared, cremebrulet for dessert.
31/03/2024: The €22 menu is first, second and dessert. The first we had goat salad and it was not bad (although I have tried better) and sausage salad (the same thing). For the second entrecôte with pepper sauce and it was good and the cassolet (a typical dish from here, it didn't kill me at all. The chicken was very burnt. For desserts we both ordered the same chocolate mousse with cream (the homemade mousse was not bad but the spray cream, a negative point for the dessert. The wine was €3 a glass (acceptable). The waiters Friendly and pleasant place. In short, the food needs improvement.

03/04/2024: I love coming here every morning to have my lunch or my midday meal or even from time to time my snack the team and superb very smiling very friendly they please when we are in a bad mood be careful this morning I came to have my lunch I am part of what says pains au chocolat I felt a cold from the waitress I understand your reaction but we are not linked that your customers like your good energy early in the morning
30/03/2024: The person who attended us today, Saturday morning, treated us really badly for not being able to communicate, since we do not speak French well and obviously she does not speak Spanish. He was very impatient and treated us badly. I was about to leave the place because of his attitude. He laughed at us talking to other people who were still in line. It makes the place look very bad for tourists who want to have a good time.

We are regulars, and frankly it is excellent, we thank the cook for his culinary delights, as well as the manager who is very friendly, smiling and caring. We are delighted to spend a few lunchtimes at Thang Long as well as a few evenings. Everything is delicious, exquisite homemade spring rolls, as well as hearty and very good dishes. Finally, an excellent Vietnamese restaurant worthy of its name. For my husband who has traveled the country, the food is worthy of a great restaurant. We thank the owner and her excellent cook. Gianni, & Arthur.
