15/03/2026: A disaster! The dish looked awful, the meat was bad, the side dishes very basic, and above all, completely tasteless! The meat was really tough, which is a shame for such a high-quality cut! The bread wasn't good either, which is a pity, because the cheese was still good but poorly complemented! The dessert was very light! Following the restaurant's takeover by a new chef, I came to try it with my friends, and we were very disappointed. This restaurant has been a favorite of mine for 15 years, where I've often come to introduce my friends to local products. I won't be going back! A loss for the village of Les Estables! Why change something that was working?! Those who want to see a beautiful timber frame should visit the Bourlatier farm...it will cost you less, as the prices seem to have gone up! It's a shame to do such a poor job on a restaurant that had a good reputation!

Spacious and very clean rooms, delicious meals in half board (quantity, quality, service), copious breakfast with pastries, fresh bread, fruit, yogurt, coffee, tea, kellogs, ham, cheese. Fair prices, garage location nearby. The hotel is located 250 m from the city center, a must for hiking or Compostela enthusiasts

08/03/2026: First time we were there. The room is a bit small and noisy. We ordered two glasses of white wine as an aperitif, one of which arrived much less full. I politely pointed this out, and the waitress replied, "Oh yes!" It would have been more courteous to top up the glass. A shame. Otherwise, no complaints.

07/12/2025: A wonderful experience! The food was excellent, prepared with local and homemade ingredients. The portions were more than generous. The atmosphere was rustic and friendly; they didn't try to cram people in, and there was plenty of space between the tables, which was very much appreciated. The service was quick and incredibly warm, with a very welcoming atmosphere. I'll definitely be back!

18/03/2026: Very disappointed! We arrived around 1:30 pm and were only told that the duck advertised as the daily special was no longer available after we had ordered our drinks... Instead, we were given the same overcooked chicken from the day before: inedible! This isn't the Manago we used to love, so we won't be going back.

17/10/2025: It's a great place to stop at Margeride, which offers a pleasant summer camp atmosphere that's conducive to socializing. The comfort is simple, but it has everything you need, and the staff is friendly. I highly recommend this stopover on your way!

30/09/2025: I really enjoyed stopping, dining, and staying at the La Margeride Accommodation and Activity Center in Saugues (Zip code F-43 170) in Haute-Loire. The welcome is very friendly and warm. The food is good, as are the rooms. The place is closely linked to the pilgrimage, with a mix of visitors, hikers, pilgrims, and cultural tourists. Pilgrims are regulars since the village is located on the Way of St. James (GR 65). Following my visit in September 2025, I can provide you with a practical and concise guide to the La Margeride Accommodation and Activity Center, with everything you need to know: Location, setting, access: The center is located in the village of Saugues, close to shops, in a converted school. Official address: 8, rue des Tours Neuves, 43170 Saugues. It is located in the heart of the Margeride massif, on a granite plateau overlooking the Allier Gorges, on the borders of Haute-Loire, Lozère, and Cantal. The center welcomes hikers/pilgrims on the Camino de Santiago (GR 65 / Via Podiensis) as stopover guests. Capacity, accommodation, ambiance, and decor: The center has a capacity of approximately 120 beds, divided into 54 rooms. There are 35 bathrooms and 42 toilets for guests (this distribution is based on the Grands Gites booking center). Two accommodation options: • Rooms with shared showers and bathrooms at the end of the corridor. • Rooms with private bathrooms (shower, toilet) for some rooms. The room furnishings were updated in 2013 to modernize the reception area. Two rooms are accessible to people with reduced mobility (PRM). The atmosphere is that of friendly, simple, and functional group accommodation—without excessive luxury—but adapted to the needs of groups (classes, associations, hikers). The decor is simple and utilitarian, with a desire for comfort but not extravagance: the emphasis is on functionality, conviviality, and the spirit of a group stay. There are also common areas: a lounge, library, performance hall, meeting or games rooms, etc. What I appreciated during my visit: The cleanliness is adequate, even better than what one might expect in group accommodation. The price/quality ratio is good for this type of group accommodation. The location in the village, the proximity to shops, and the centrality for hikers/pilgrims. The "group accommodation" character allows group stays (schools, internships, associations) to benefit from good facilities (rooms, grounds, etc.). The style is unattractive but efficient, which is acceptable for the target audience. Cleanliness, Restrooms, Showers: From what I saw and experienced during my visit, overall, the rooms, showers, and restrooms are quite satisfactory, clean, and well-maintained for a group center. The fact that many showers are located in shared restrooms requires users to behave collectively (hygiene rules, respecting rest times). Rooms with private bathrooms offer additional comfort compared to rooms with shared restrooms. The center has a laundry room (with washing machine and dryer) accessible to guests. Food: Dinners, Breakfasts: The center offers full-board options (breakfast, lunch, dinner, children's snacks) for school groups/holiday stays. It also offers half-board options. Breakfast is presented as a "petit déjeuner française" (coffee, bread, jam, etc.). I recommend the La Margeride Accommodation and Activity Center in Saugues (Zip code F-43 170) in Haute-Loire. 20/10/2025: Very nice place, the owner very pleasant, despite our late arrival. Perfect service, no expectations, yet the owner is all alone serving, despite a full room. Bravo, you are very well organized. A nice visit from the owner at the end of the meal. I recommend this restaurant; the food is very good, and it's very friendly. Good luck!
