03/10/2025: I had a fantastic solo dinner here. The chef/owner was so accommodating and made some great recommendations. I had foie gras to start and asked about what wine pairing to have. He said ideally a sweet wine but since it was a starter I opted for a rosé instead - however, when he brought out the foie gras, he also brought out a little pour of some sweet wine which was a lovely touch!
Definitely recommend, it's a little out of the main area but that makes it even better!

Another dish I ordered was scallops in lobster bisque with linguine, which was also very good. The terrace is very pleasant, but remember to bring a light jacket for the evening.

20/05/2026: The hotel is very well located. It's beautifully decorated with spacious and comfortable rooms. The bathroom is very large and has a separate shower and bathtub. It's necessary to reserve a parking space in advance if you want to be sure of parking at the hotel.

21/05/2026: Excellent restaurant. Chef Rodrigo, a passionate and very friendly Argentinian, prepares simple yet expertly crafted dishes bursting with flavor. It's the best ribeye steak in Albi, cooked over a wood fire.
I recommend the grilled octopus, all accompanied by a lovely selection of Argentinian and Chilean wines. Good value for money and excellent service; I'll be back.
14/05/2026: Passing through Albi, we decided to try a different kind of cuisine. Simply delicious, authentic flavors, expertly prepared. An octopus we won't soon forget. We highly recommend it.

Certainly one of the best restaurants in Castres and southern Tarn.
21/05/2026: Another exceptional experience at Bistrot des Saveurs! Incredible welcome and service. We opted for the set menu of the day. Dishes that delighted the eyes and the taste buds!
