10/12/2025: A magical and unforgettable interlude! Upon arriving in the village, we were immediately captivated by the charm and authenticity of the place. A simple and warm welcome instantly immersed us in a family atmosphere. The room was very comfortable, understated, and tastefully decorated; we slept very well. But before that, we had dinner… each dish was an immersion into the Chef's world, accompanied by a unique ceremony, and the staff reflected the quality of the establishment. By far, our best Michelin-starred experience! Indulgence, generosity, authenticity, local produce, finesse, precision—everything was there… The icing on the cake was the privilege of a long conversation with the Chef, with whom we shared our common love for Martinique! We completely understood the world of this exceptional chef and embraced it wholeheartedly! The place and the staff reflect the Chef and his wife! Thank you so much for this wonderful experience! 08/12/2025: No comment on the food, but the appalling quality of the service was enough for us! At 12:40 pm (with the "open" sign lit), the chef, seeing us approach, quickly gestured through the window, "Don't come in, dogs aren't allowed," without even bothering to speak to us. We weren't asking him to look after our dogs while we were on vacation (90% of restaurants accept them), but this gentleman clearly wanted to go home and didn't want to open another table... So, no doubt the chef will take pleasure, as with every Google review, in responding with contempt and bad faith. Apparently quite content with their old reputation, these restaurant owners probably make enough money during peak season to turn away customers with dogs and forget that in this business, hospitality is also part of the customer experience... And that's just as well, because it allowed us to discover, in the village, a small, unpretentious restaurant that cooks with fresh ingredients, where you're welcomed with your dog and a smile, for less than the price of "Poison d'avril".

The system of being able to create your own menu according to your preferences is a fantastic concept, allowing for complete choice of the menu without any restrictions. The service was impeccable, the setting is beautiful, with a lovely terrace for sunny days.

10/01/2026: We had lunch with the family on a Saturday, and it's worth noting that they had a weekend menu, which was much appreciated. The restaurant is located in the center of Carcassonne and has a very pleasant and welcoming decor that blends rustic and modern elements. The dishes on the menu were beautifully presented and prepared. We didn't find anything we didn't like. The service was excellent, although we had a little trouble understanding each other at first, but that didn't detract from the overall experience.

They even had a little something for the dog. In short, a place I'll definitely make a detour to next time I'm in the area.

28/01/2026: We went there for a drink; my aunt and I ordered two hot chocolates. The service was slow and cold, both when taking our order and when bringing it to us. The hot chocolates were basic, just like homemade: milk and cocoa powder (confirmed by the waiter, or at least the gentleman who took our payment). At €6 a pop, it's a disgrace, a rip-off! In such a prestigious establishment, you expect something artisanal, something that lives up to the promise of the facade—like hot chocolate cooked with milk and cream, a substantial drink, in short. After we complained to the supposed waiter, he curtly offered us the miraculous recipe for such a disappointing drink, followed by a simple "OK," colder than the weather outside. Having worked in the hotel and restaurant industry myself, I believe I can say that employees have a duty to live up to the standards of their establishments. Leaving aside this disappointment, this sector requires self-discipline and a pleasant demeanor to encourage customers to return—in short, the foundation of sales. This was a disappointing experience, with little substance to it. After reading this, I won't be returning.

11/12/2025: I don't know if it's the best cassoulet around, but we certainly enjoyed it. The excellent explanations about its preparation allowed us to fully appreciate it. The specialty was served in a piping hot casserole dish, the beans were very flavorful, and the meats were delicious. The service was impeccable, the atmosphere vibrant with an exhibition by a local artist, but the bill was a bit high. It doesn't matter when you know that this same cassoulet is also enjoyed in Chicago... A great experience.
