05/07/2025: A very cozy and delicious restaurant. A very friendly welcome, a charming setting, and delicious food. Everything was perfect; we had a wonderful time. Everything is homemade, locally sourced, and you can tell! A real treat.

18/06/2025: Lovely provincial restaurant providing good cuisine and indoor/outdoor seating in a small village. A nice place to have steak / tuna steak cooked on hot-stones at the table.

18/12/2024: The cuisine was very good, we opted for the party menu, which was a treat, but the service is worth seeing again. We also regret that the Fontfroide wines are no longer represented in the restaurant, knowing that we are in the middle of the abbey in a setting Magnificent

14/12/2024: Rather disappointed! Group meal planned for 70 people including 2 no-shows (case of force majeure) we paid for 69 people. Only one person was the subject of a commercial gesture...& rigid reasoning not very credible... especially since 2 years ago for 6 defections we had no extra!!! Decent meal without more… Times change… so do opinions..

10/07/2025: Very good cuisine, traditional with a touch of originality. Very friendly servers. However, some dishes weren't hot enough.

19/08/2024: We spent the weekend in the Mediterranean. We therefore had lunch and dinner at the restaurant, it is clear that the cuisine has improved, worthy of a semi-gastro. The staff is friendly, efficient and available, thank you Manon and Renaud. In the room (119) perhaps a few small details to review, notably the fact that there is no fridge, otherwise a comfortable room. Have a great weekend, thank you

08/08/2024: Welcoming and smiling waitresses. Excellent meal, very good meat and cooked as we requested. Good surprise for a restaurant chain. They serve continuously, it's very pleasant on the road to vacation to find a place to eat in the middle of the afternoon.

23/11/2024: Very well located, very warm welcome, the room at the top, large, warm and functional, the bathroom at the top, more luxurious than the Mercury hotel in Albi!!!!! Very good dinner and very good breakfast <3. The only downside is a very small TV. Conclusion I will return with pleasure, thank you La Chaumière.

14/09/2024: Manager allows himself an odious response which says a lot (in addition to not doing great cooking). I'll let you see it in a screenshot. Basically: the restaurants in Carcassone, I said, are obviously rated by people who know little about cooking and are not very particular about their food; therefore be wary of the very good Google averages which reflect correct establishments and nothing more.

03/09/2024: Basically, if the customers have children, I would tell you that they won't eat anything because there is only adult food. Girl, better go to a fast food restaurant. (After eating at this restaurant, I went to a fast food place because I was still hungry.) Well, in general, food in France is not that good, so it’s understandable that we weren’t very lucky. People who are vegetarian or vegan don’t have many options in this restaurant as there’s nothing for them. I don't know if drinking wine or some kind of soft drink in the middle of the service is very normal, or maybe it's typical in France Idk. I understand that you might be thirsty, but I’ve never seen this in any other restaurant I’ve visited. I think it shows a lack of respect towards customers. I personally wouldn’t go back because of the lack of variety, quantity, and service. What I can say is that the place was quiet, which is always a good thing.

06/09/2024: Arrived here 3/9/24 and it's closed, no notice to say when you are open or closed at the restaurant and Google is not correct .UPDATE...we managed to eat here 5/9/24 and it was great service and pizza was one of the best I have had,great taste & good base.would return again if passing. We had a good chat with the owner about quillan .

12/01/2025: Good food in a very pleasant place Clean, good, beautiful and refined dish. Small suggestion, 7 hour pork, the string should be removed from the plates. Be careful with the servers to be more "attentive" to the customers ;o) I recommend

20/08/2024: Unfortunately, our experience did not live up to our expectations. After being seated, we had to wait over 45 minutes before anyone came to take our order, even for drinks. The wait between courses was also very long, so much so that we didn't really have an appetite once the dishes were finally served. A more responsive service would have greatly improved our experience.

20/08/2024: Very nice little restaurant inside and out with a big organizational problem for the service. In fact, having a server dedicated to one task + lack of efficiency = waiting 45 minutes for an order + 30 minutes between each dish. That said, the cuisine is not bad without being delicious.
