29/03/2026: The food was fantastic! We tried the cassoulet, a very generous portion and excellent quality. The service was also great; they spoke Spanish and the staff came around to ask if everything was alright. I would definitely return.

20/03/2026: A warm and attentive welcome. From appetizer to dessert, a delight for the palate! A sublime terrine with a proper salad dressing and a pork cheek to die for! I highly recommend stopping by! Wow! Thank you, chef, it was a real treat!

21/12/2025: A really great way to do a trip back in time

17/11/2025: Medieval cuisine is certainly different from what we're used to eating today. Some dishes might, at first glance, seem a little bland, or at least not the kind of thing that would immediately make our mouths water, because our 21st-century palates are accustomed to tastes that are too sweet, too fatty, or too salty (clearly not the best for our health!). However, the kitchen team rose to this challenge brilliantly: each dish was perfectly seasoned, fragrant, and truly delicious. This made the culinary experience even more successful. The experience is further enhanced by the entertainment offered throughout the meal, as well as by the choice of costumes at the beginning, which immediately immerses us in the medieval atmosphere. We also greatly appreciated the intimate atmosphere of the restaurant, with only one seating at lunchtime: no constant coming and going, allowing us to fully enjoy the moment. A wonderful discovery that we highly recommend! Until next time!

14/05/2026: The Cité de Carcassonne is a must-see every time I travel through the south of France. And if there's one thing you absolutely shouldn't miss, it's the fabulous Bastille Day fireworks display. I must have been back at least ten times, and the effect is always the same: majestic. The illuminated ramparts, the explosions that set the whole citadel ablaze, the atmosphere in the city… there's something truly unique about it. Even a simple two-hour break during a road trip is enough to be blown away by the sights. On the way to the Abbey of Saint-Martin du Canigou, it's the kind of stop that transforms a journey into a lasting memory. 500 meters before the paid parking lots, on the hill before descending into the citadel, a strip along the edge allows you to park for free. 5, 6 cars max.

18/05/2026: The menu du jour was excellent. We loved the cod croquette and the Iberia Porc was delicious. The fish was fantastic cooked to perfection and the balance of the flavours demonstrates that the chef really loves fish. The service was impeccable with a wine list that was broad but not overwhelming. We have been going for several years now and today we thought it was the best meal to date! Thank you chef !

11/05/2026: Don’t be fooled by the location, which indeed looks industrial, once you arrive you are in an oasis of shade and flowers. Outside seating is in two levels and space between tables is generous. Service is attentive and pleasant. Today menu is interesting and varied, wine list is appropriate. If you want to boost your appetite, take a walk along Canal du Midi.

11/05/2026: A very pleasant seafood restaurant in Carcassonne! I had a wonderful time; the atmosphere is friendly and attentive without being intrusive. I had a bouillabaisse (which I had pre-ordered) and frankly, it was delicious: fragrant, generous with fish, and perfectly seasoned. You can tell the ingredients are fresh, which makes all the difference. A great place for seafood lovers; I highly recommend it! I'll gladly go back! Thank you to Eddy for his humor, kindness, and culinary talents! 🐟

10/05/2026: We dined at Gil's two nights in a row, and having thoroughly enjoyed the first evening, we decided to order bouillabaisse for the following day. The portion was more than generous for a very reasonable price. Absolutely delicious, topped off with a warm welcome from Eddy and the young waiter whose name I unfortunately didn't get. Highly recommended for anyone who loves fish!

16/05/2026: A fantastic evening where we thoroughly enjoyed ourselves! It was my first time having mussels with chorizo: they were excellent! The staff were incredibly pleasant and friendly! We found it hard to leave because the place was so lovely and peaceful. Everything you need for a wonderful evening! We'll be back!

26/05/2026: An excellent place! I'm always on the lookout for authentic spots, and Moulin Vert is a wonderful discovery. We had a fantastic meal! The grilled meats are simply excellent, with top-quality meat cooked to perfection. The service is also top-notch: the team is welcoming, efficient, and attentive. A major plus for sunny days: their small terrace/patio, a true haven of peace, incredibly pleasant and intimate in the summer. It's the ideal place to spend a great time enjoying a delicious meal. A really cool place that I highly recommend!

15/02/2026: Tucked away in the old city of Carcassonne. A very delicious meal, albeit a bit small portions (though that might just be me). We had canelloni with foie gras, followed by a super tasty steak with pepper sauce. The desserts were also delicious. We had the friendly service choose our wine, and it was absolutely perfect.

08/05/2026: A good experience at this restaurant located in a tiny village not far from Fondfroide Abbey. The chef is, in fact, the former cook of the abbey's restaurant. The cuisine is creative and well-executed, but there are a few drawbacks: the portions are really small, especially the side dish with the main course, which is a shame because you end up eating the bread... which is mass-produced (why serve bread that looks like it belongs in a motorway service station cafeteria?). I think the €21 set menu (starter/main/dessert) during the week offers much better value for money.
