25/04/2026: A perfect experience at Patxamama, even without a lunch reservation! I was the only one there, but the lovely team managed to find me a table with a smile, right during the Ham Festival! Excellent service, everyone was so attentive in a wonderfully friendly atmosphere. I had the Bayonne Ham Festival menu: for starters, a perfect egg with asparagus cream, Bayonne ham, and croutons—a perfect balance of textures and flavors, and a delightful contrast of temperatures. For the main course, pork loin with carrot velouté, marinated red cabbage, and a rich jus—tender and incredibly delicious. The Carrément Chocolat dessert was the perfect ending to the meal. Everything was delicious; this place deserves all the stars. I highly recommend it. Thank you, and see you soon!

One regret: the very short wine list, very few regional wines and many (too many?) Bordeaux. Professional and attentive service. In short, an excellent restaurant run by true professionals. 30/11/2025: I visited on Saturday, November 29th. From the moment we arrived, we were immersed in the experience, starting with the little golf cart that picked us up and took us to the restaurant. The welcome was fantastic, very friendly and welcoming, with our coats taken by the staff. The staff were excellent, very kind and respectful. We were immediately drawn into the atmosphere of the inn upon entering. The dining room was very intimate, simple yet adding to the charm of the experience. We began our meal with a magnificent view of the Basque mountains, which is the highlight of this place. The meal started with amuse-bouches that immediately set the tone for what was to come: incredibly comforting and delicate. The courses flowed seamlessly, each one of a high standard, featuring quality, locally sourced ingredients expertly prepared by Chef John Argaud. I highly recommend this place; the experience is incredible from beginning to end. Having opted for the signature menu, every course was exceptional, each offering a delightful surprise. I would have loved to try the truffle, which was unavailable, but otherwise, the meal was superb from start to finish. The excellent service, including the option to enjoy the petit fours on the terrace, was truly wonderful.

04/11/2025: A magical place!! The room with its fireplace was perfect for a romantic evening! We were welcomed like VIPs. The breakfasts, with their wide selection of homemade products, made us want to try everything!! And the view of the mountains and the estate... We also had dinner at the bistro-style restaurant and we LOVED it! PERFECT

Since you won't let me reply to your comment, I'll tell you it's not unusual, considering they have an owl inside the restaurant to scare the birds away. I spoke to the manager and he played dumb, saying he didn't understand Spanish. When I booked the table, he had no problem speaking to me in Spanish. I just wanted the restaurant staff to show some empathy towards me for the damage caused. Best regards.
