18/12/2024: Nous avons passé deux nuits à l’auberge et donc deux petits déjeuners et un repas au restaurant de Mr Gougeon. Tout fut parfait du début à la fin de notre séjour. Chambre spacieuse et très confortable, petits déjeuners avec des personnes en service très agréable, avec choix de nourriture variés et toujours excellent. Que dire de notre repas au restaurant ; Accueil de Gilles Gougeon très sympathique, service très professionnel, sans être guindé, ce qui favorise une très bonne ambiance dans le restaurant. Concernant le repas, nous avons ici l’un des meilleurs 3 étoiles que nous ayons visité, tous les produits sont exceptionnels et sublimés de main de maître par Mr Gougeon au sommet de son art. Du début la fin nous fûmes surpris et ravis par tous les plats proposés. Un conseil, laissez de la place pour le fromage et le dessert. Au plaisir de revenir vous visiter . Bonjour du Québec.

14/12/2024: Surfait Bien que nous ayons choisi un menu gastronomique, nous avons été très déçus par la qualité du service (impossible d'avoir du pain ) par la cuisson du poisson (cuit dans une bougie) par le rapport coût/goût et qualité des mets Nous déconseillons fermement. 13/08/2024: Very friendly welcome. Affordable menus. Or salads that aren't too expensive either. It was very good. My coke hadn't gone sour when I opened it, the waitress warned me and told me to let her know if it was more carbonated. The artisanal sausage was very good. And forest pasta too. Also the vegetable pie of the day. A little less on the desserts but still good. Panacota a little too sweet for my taste but it's a question of taste. Waitress attentive and friendly.

23/11/2024: Very well located, very warm welcome, the room at the top, large, warm and functional, the bathroom at the top, more luxurious than the Mercury hotel in Albi!!!!! Very good dinner and very good breakfast <3. The only downside is a very small TV. Conclusion I will return with pleasure, thank you La Chaumière.

06/09/2024: Arrived here 3/9/24 and it's closed, no notice to say when you are open or closed at the restaurant and Google is not correct .UPDATE...we managed to eat here 5/9/24 and it was great service and pizza was one of the best I have had,great taste & good base.would return again if passing. We had a good chat with the owner about quillan .

14/09/2024: Manager allows himself an odious response which says a lot (in addition to not doing great cooking). I'll let you see it in a screenshot. Basically: the restaurants in Carcassone, I said, are obviously rated by people who know little about cooking and are not very particular about their food; therefore be wary of the very good Google averages which reflect correct establishments and nothing more.

03/09/2024: Basically, if the customers have children, I would tell you that they won't eat anything because there is only adult food. Girl, better go to a fast food restaurant. (After eating at this restaurant, I went to a fast food place because I was still hungry.) Well, in general, food in France is not that good, so it’s understandable that we weren’t very lucky. People who are vegetarian or vegan don’t have many options in this restaurant as there’s nothing for them. I don't know if drinking wine or some kind of soft drink in the middle of the service is very normal, or maybe it's typical in France Idk. I understand that you might be thirsty, but I’ve never seen this in any other restaurant I’ve visited. I think it shows a lack of respect towards customers. I personally wouldn’t go back because of the lack of variety, quantity, and service. What I can say is that the place was quiet, which is always a good thing.

01/09/2024: I will try to be brief because I am very disappointed: hard pudding terrine, uncooked chicken, dry fries, slow service when few people, excessive price for bad food. Address to escape, in any case, they won't see me again, that's for sure...

31/08/2024: I highly recommend this establishment in Corbières. We had mimosa eggs (3 eggs and salad) and truffled foie gras as starters, then truffled shells and ham as main course, confit lamb shoulder and confit ratatouille. The dishes are very generous, very tasteful and very well presented. For the truffle shells (excellent and are really truffled and not just a little, the sauce is excellent combining crème fraîche, parmesan and grated truffle in abundance) for 15th the dish is more than perfect. Note that the dish is very hearty but truly delicious and well balanced. For the shoulder of lamb, nothing to complain about, the meat is tender and the ratatouille accompanies it perfectly. Although we had good feedback from dessert, we were stuck and we couldn't have any because our stomachs wouldn't allow it. At 2 in content 2 starters including the truffled foie gras and 2 dishes and 2 drinks we had for 30 euros each. If we take a dish and a drink counted approximately 20th. There is also the daily special at 9.5e and also a starter, main course and dessert menu at 26e. Every Friday it's mussels and fries. Warm atmosphere, good service. 1 very very good point for the shells which were a treat.

20/08/2024: Very nice little restaurant inside and out with a big organizational problem for the service. In fact, having a server dedicated to one task + lack of efficiency = waiting 45 minutes for an order + 30 minutes between each dish. That said, the cuisine is not bad without being delicious.

20/08/2024: Unfortunately, our experience did not live up to our expectations. After being seated, we had to wait over 45 minutes before anyone came to take our order, even for drinks. The wait between courses was also very long, so much so that we didn't really have an appetite once the dishes were finally served. A more responsive service would have greatly improved our experience.

16/11/2025: Recommended by a tourist with good cell service 😂 Modest decor, no paper tablecloths. Clean restrooms. Quick service and a smiling owner. The €22 set menu was very generous and tasty. Warm, soft rolls. Oysters shucked perfectly with no shell fragments, cod salad, and shrimp plates with garlic and oil. The sea bream fillet was good with a sauce and very generous portion with noodles. I had a good, tender piece of flank steak with homemade fries. I recommend the apple crumble 🍎, which is excellent. I recommend it for €22.

19/10/2025: The waitress is an expert in the selection of local wines. She is very friendly and dynamic. The chef only cooks fresh products. It is a simple and very tasty cuisine. Each dish is excellent and fresh. The Fisherman's Pot is a Master Class. Hats off, especially in a seaside town where frozen and over-the-top foods are king. Not to be missed!
