21/09/2026: We have been frequenting this restaurant for some time now, and with each visit, we have noticed a steady improvement in the cuisine, and above all, a remarkable consistency. Our latest eight-course tasting menu confirmed this impression once again. The cuisine is masterful and cohesive, built around high-quality, seasonal ingredients, with a strong emphasis on local produce. Mackerel, foie gras, frog legs, lobster, John Dory, and French Wagyu beef are all prepared with precision and respect for the ingredients. The cooking is perfectly executed, the combinations are spot-on, and the sauces add depth and balance to the dishes. We were already particularly impressed during our Easter lunch by the dishes featuring lamb, seasonal truffles, asparagus, lobster, and turbot. This latest experience confirms for us the evolution of the cuisine, but above all, the consistent quality of the offering. We also greatly appreciated the wine pairings, with relevant and sometimes surprising choices that perfectly complemented the different dishes. We sensed a genuine knowledge of the local terroir and ingredients throughout the entire team. The service mirrors the cuisine: attentive, warm, professional, and well-orchestrated. We felt a close-knit, dedicated team, committed to creating a truly exceptional gastronomic experience, right down to the smallest details. Our feeling is that the restaurant has reached a level of mastery, personality, and consistency that, in our opinion, deserves full recognition. 07/09/2026: How can I put it? "All-you-can-eat" doesn't mean a terrible buffet, but I was very disappointed with the lukewarm starters (snails and parsley mussels were supposed to be hot). They even set their plates down, claiming there wasn't enough food to keep things warm, which the cashier told me was overpriced. Very disappointed.

17/05/2026: Great spot for windsurfing, both as rental-only or with classes. I spent three days there in May 2026, lucky to get strong winds between 35-45 kmph. I took a group class with Chloe (she’s great as a teacher, explains well the actual steps to follow) and other days I was renting gear. Julien is in charge of the rentals and organizing classes, and responds to emails fast. He’s chill and easy going, gets your gear set up in no time and provides advice and overall positive encouragement. I’d come back without hesitation.

19/09/2026: What a wonderful restaurant. Set in a central square in the Bastide of Carcassonne, with both interior and exterior seating available. Wide ranging menu with vegetarian choices available, and knowledgeable waiting staff to guide. A very good wine list on hand with options to suit all tastes and wallets. The food was fresh, well prepared, and well presented,with generous portion sizes. Side dishes were also available. The staff were attentive, and helpful, but not overbearing (which is a plus). There when needed, and invisible when not. Most spoke a good level of English alongside other languages. They showed a good knowledge of the menu and a strong desire to help customers make good choices. The restaurant was busy all night attracting passing trade in the square and clearly popular with locals as well as tourists. Sitting outside on a warm September evening, had the benefit of people watching in a lively location. Definitely one to visit if on a day trip, or to frequent often if in Carcassonne for longer.

19/08/2026: Arriving just in time by boat for dinner here, right on the canal, and with a tall waiter who spoke a little Spanish, very friendly and took excellent care of us. The cider was very fresh and good, and all the tapas we ordered were delicious, especially the fish and chips and the burrata with pesto. Thank you!

28/06/2026: Great owner! We hadn't realized he was closing, so we ordered, asked for a table and chairs, and he served us. We had a fantastic time overlooking the beach; it was wonderful. Despite looking tired, he was incredibly kind. And we thoroughly enjoyed the paninis and perfectly cooked fries. We'll definitely be back.
