An exceptional restaurant, undoubtedly one of the best in the entire region. The cuisine is inventive, creative, and exquisitely refined, with flavor combinations that are always perfectly balanced and surprising. The team is professional, attentive, and passionate, making every moment unique. The hotel itself remains an absolute benchmark in the Roanne region: comfort, elegance, and impeccable service. 30/03/2026: We had a wonderful stay in a beautiful setting. The welcome, the service, the six-course "festive flavors" tasting menu, the after-dinner drink served in the lounge, and even breakfast—everything was perfect. We will gladly return. Thank you.

The food they offer is simply world-class, and their service is second to none. We wholeheartedly recommend it, and you should definitely spend at least one evening at Hors Piste on every visit to Les Sybelles! Thank you so much for this incredibly wonderful evening! And throughout the evening, you'll receive the most delicious amuse-bouches from the kitchen, the likes of which you could never have imagined – true culinary mastery! 22/10/2025: Such an amazing experience. Liz and Joe were the most gracious hosts and treated my partner and I exceptionally. With an incredibly informative tour, exceptional food and world class wine. Anything written in this review doesn't do the evening we spent with them enough credit to an unforgettable night and lovley people. If we ever have the opportunity of being in the region again, we will be returning.

24/09/2025: Winery visit: it is impossible to overstate the warmth of hospitality of Joe and Liz! We arrived as strangers, and left feeling like family. The winery tour was everything we could have hoped for: starting with a chilled glass of white on the terrace overlooking the hills, tasting grapes on the vine about to be harvested, a tour of the equipment, pouring wines straight from the tank and dipping a cask, with Joe telling anecdotes about the history as well as explaining how it’s done. Finally Liz’s amazing and generous cooking in their beautiful dining room, including her home-cured salmon. She even tweaked the menu to ensure that our young Asian friends got a home-cooked rice dish. Convivial doesn’t begin to describe it. Thankfully, Liz also arranged with our taxi driver to come back rather later than originally planned 😂. Practical note: it’s about 20 minutes drive from Carcassonne and they can recommend taxi drivers.

22/05/2026: Spacious and clean room, very very friendly and helpfull staff! They have a nice garden where you can have a drink and the breakfast is extensive. We felt right at home! The hotel is located a bit outside of the center, which makes parking easy. You can walk to the center through a lovely park.

06/07/2026: Enjoyed a friendly & comfortable stay in summer for 4 nights here, our room was upgraded to slightly larger size, very clean & well appointed. Great shower, large bed, balcony facing the side, looking to the mountain. Had a tasty dinner in the restaurant one evening, food was excellent & service delightful. Did not try the hotel breakfast as used the local bakery for this & our picnic food. A cooling fan may have helped in the room for the summer temperatures, we opened the patio doors for air. We liked the pool & sauna etc, especially as it was never busy! Robes & shoes an excellent idea to provide for guests. Overall a lovely alpine style hotel with modern facilities. I would recommend staying here. We love Châtel & have skied here often with our family, so may return to Macchi Hotel sometime.
