29/03/2026: On my way to Millau for my vacation, I followed the sign for La Couvertoirade. Windy, windy... but who cares? Nestled in a former 12th-century sheepfold, in the heart of the ramparts of La Couvertoirade, I quite by chance stumbled upon this charming cave-restaurant, La Tour Valette, where I enjoyed authentic home cooking (sheltered by its thick walls) in a beautiful vaulted room. A superb welcome, smiles, friendliness, and kindness. Beautifully presented dishes, wonderful flavors. I let myself be guided by the friendly, approachable, and smiling "waitress" (owner) and opted for the set menu that day: Roquefort and walnut salad, Aligot and sausage (not usually a fan, but... I was won over! 🤩😍) ...a real treat!

13/04/2026: Rock system with a card you have to load money onto. Then you have to tap your own beer. You get a different beer at every table. What if you want a drink when there are people sitting there? Not for me... .

19/04/2026: A year had passed since my last visit. Driven by a yearning for more, I longed to experience that intense ecstasy again. Despite the boisterous noise from the diners at the next table, these crêpes transported me on an extraordinary journey to a land of pure pleasure, a lost paradise, an oasis of delight. The crêpe awakened unfamiliar taste buds and gustatory neurons within me. This crêpe was exquisitely tender. The delicate liqueur of the Camembert blended seamlessly with the tender chicken, and then the exquisite bacon combined with the natural firmness of the potatoes to evoke in me a feeling of intense pleasure—nay, a culinary orgasm like no other, one I will remember for the rest of my life. This establishment is not simply a restaurant; it is a divine, celestial hotel, where one enters aimlessly, with an empty stomach, and leaves with a specific purpose: to become better, to finally reach the perfection of this place. Eating here is no small thing; it's something to be earned, and not everyone can appreciate this level of perfection. As Saint-Exupéry said, "Perfection is achieved, not when there is nothing more to add, but when there is nothing left to take away." And for me, in this restaurant, if anything should be taken away, it would be the ungrateful, uncultured, arid, and incongruous customers who fail to recognize the beauty of these crêpes. I want to make it clear that I was in no way paid by the restaurant; I'm simply a customer stunned by a culinary quality worthy of Philippe Etchebest, a quality that would make even the most hardened chefs envious. A more than satisfied customer: happy to have finally experienced such ultimate bliss. Sincerely, thank you.

A truly excellent sommelier, he shares his expertise through tastings of exquisite wines from all regions at very reasonable prices. The quality of the wines is matched only by Christophe's kindness and warm welcome. A must-visit.
