16/05/2026: My wife and I were making a quick stop near Vesoul to take possession of a property we'd bought in the area. We'd looked into restaurants in the region and had decided to go to one in a larger town, either Vesoul or Luxeuil.
And then, during our conversation with the seller, he recommended Restaurant Rémy in Saint-Loup. "You'll see," he said, "they offer everything from a classic menu to a gourmet menu." We went to Saint-Loup without much enthusiasm.
Wow! A magnificent building! The courtyard is extraordinary!
So, we went inside.
Wow! The decor was perfectly suited to the occasion.
Wow! The dining room was impeccably designed.
We took our seats, and the owner gave us a choice between the "gourmet menu" (the quick option) or the "gastronomic menu" (very tempting). We had 200 km to drive home, so we opted for the gourmet menu. She then presented us with the menu, featuring incredible ingredients. We nodded, not quite knowing what was in store for us.
Here we are.
The amuse-bouche (made with ingredients we would never have thought of) arrives.
"Enjoy your meal, my love!" Incredible, amazing, delicious! Now for the starter!
Incredible, amazing, delicious.
And this continued right through to dessert.
I should add that the wine was excellent as well.
And then, it was time to leave! We had carefully read the menu before coming in, but "This is impossible," I told ourselves! "It's a meal costing over €50/€60 (per person)!"
Drumroll: Less than €40 per person.
Bravo, congratulations, excellent, delicious, to the chef first and foremost, to the staff, for bringing these exceptional flavors and combinations to life in this superb setting, this tradition of a love for food.
Ahhh, how disappointed we'll be next time we go to a restaurant near us. (They're excellent, but not the same.)
Note: I'm absolutely not the type to write reviews that will be read by the whole of France, but unfortunately, it has happened far too often that we've been disappointed, even very disappointed, by the food. So I'm sorry for writing such a long rant, but it was necessary, for them, for tradition, for the obligation to eat properly. Thanks again, and I hope to see you very soon.

15/06/2026: We spent two nights at Château Bellevue in the beautiful "Hortense" suite, so romantic with its floral wallpaper in shades of cream and sky blue. The bedding was very comfortable.
To be perfectly honest, our stay was absolutely perfect, and you'd have to be very demanding to find anything to criticize!
In detail:
The place is delightful and peaceful, and the view from the rooms overlooking the countryside (at least from ours) is idyllic.
Breakfast, served in the veranda overlooking the garden, offers homemade jams, honey from the estate, brioche, granola, and freshly baked cake, free-range eggs from the Gers region, warm pastries, local farm yogurt, good cheeses (not mass-produced Babybel...), ham, and more.
It's a real treat to stroll through the well-maintained, flower-filled park, shaded by very tall trees. Children of all ages, from 1 to 101, will appreciate the friendly presence of animals (donkeys, geese, pigeons, chickens, rabbits, etc.), as well as the outdoor pool, the pétanque court, and the billiards room. The meals are delicious, prepared with vegetables from the chef's garden and local produce, and served with warm, crusty homemade bread: it's as beautiful as it is tasty, and the portions are perfect for a normal appetite.
I didn't try the spa area myself, but one of my daughters did: hammam, heated indoor whirlpool, terrace overlooking the garden, and the option of sipping herbal tea in a bathrobe by a fireplace to warm up in winter—it's pure luxury!
Everything at Château Bellevue exudes an atmosphere of great elegance and authenticity; it's a place with a history and a vibrant atmosphere. It feels like a beautiful, charming holiday home, not a hospital like most hotels... It's incredibly elegant but not flashy, poetic, with linens from antique wardrobes, noble floorboards that creak (a little), silverware and Limoges china stamped with the castle's coat of arms, tasteful decor (the living room and dining room are truly beautiful), a cozy, intimate atmosphere, and above all... truly warm hosts!
The only disappointing moment of the stay... was having to leave ^^

However, the service was subpar (we were served by a man). He was rude, not a smile, and seemed annoyed that I was asking questions, especially since I'm pregnant… not to mention my mother's chocolate fondant: the first slice was overcooked, and the portion was tiny (because it was the last bit of the cake) for 9 euros.
We won't be returning, which is a shame.

08/07/2026: I celebrated my retirement with about twenty friends. We had a wonderful evening. The welcome was excellent, Damien and his waiter were fantastic! The food was delicious! We thoroughly enjoyed it!

The service was warm and efficient, and the food was delicious! The tender pork in cider reminded me of my grandmother's cooking—ah, what a trip down memory lane!
Thank you to the team for a wonderful, timeless moment in an ideal, shaded setting. I highly recommend it and will gladly return!

We had the signature dish, "spit-roasted octopus." It's a nice change from the Galician-style octopus. A wonderful discovery that we highly recommend to octopus lovers!
We were just passing through (on holiday in Finistère) but we would gladly return on a future trip!
