During a conversation, I learned that the chef was working alone in the kitchen (Easter lunch), but this was not at all apparent. The dishes were excellent and beautifully presented. Congratulations to the chef! And a big bravo to the entire team.

07/04/2026: "Oma bis" is over, or almost (kimchi will remain on the menu, but not the famous Oma rice). Chef Park Ji-hye has left, and her successor (see below), with a Japanese culinary tradition after this Korean interlude, is expected to take over the kitchen by the end of April. In an Easter mood, I suppressed any negative reaction upon learning that at lunchtime, only a set menu of starter, main course, and dessert was offered, with cauliflower gratin as an alternative for vegetarians. The "always" star dishes (beef tartare with nori seaweed and rice, or sea bass fillet with beurre blanc) are served in the evening. My impromptu plan B involved creating a flavor triangle by ordering the superb homemade kimchi and a bottle of Serragghia Fanino from the island of Pantelleria (Domaine Gabrio & Giotto Bini, a Sicilian wine somewhere between red, orange, and rosé, a beautiful blend of Catarratto and Pignatello grapes grown halfway between Sicily and Tunisia). These wonderful ingredients resonated perfectly with the creamy mushroom and shiitake soup, and then with the slow-cooked chicken supreme, accompanied by marinated soybean roots and a carrot purée with sweet garlic, drizzled with chili oil. Without the kimchi, the amount of vegetables would have been insufficient to offset the relative dryness of the chicken. The strawberry panna cotta was very fresh and delightful. This rather well-executed seasonal cuisine was enough to hasten the arrival of spring; which is the main thing while waiting for what's to come. This suite is named after Benjamin Pannier, sous-chef at the ERH restaurant on rue Tiquetonne. He trained under Keita Kitamura (ERH then Apothéose, a 1-Michelin-star restaurant in Tokyo), Ryuichi Utsumi (ERH), and also with the legendary Kosuke Nabeta at Sola, on rue de l'Hôtel Colbert in the 5th arrondissement. The next visit (preferably in the evening) will be the perfect opportunity to explore the sake menu!

A delightful surprise. The dishes are refined and exquisite, perfectly seasoned. Starters: puff pastry with snails and scallop tartare.
Main courses: cod with lobster bisque and seared tuna with chorizo sauce. Dessert: incredibly good profiteroles.
The waiter is friendly and uses the informal "tu" with everyone. The kitchen is small.
Go without hesitation!
