25/04/2026: Update 2026 - A slight dip in quality, the welcome was still as friendly as ever, but in the end, I would have preferred a single foie gras as a starter rather than a "duo." The pan-seared foie gras lacked texture and flavor, while the semi-cooked foie gras was perfect. The beef released too much water (which diluted the sauce)! And the vanilla ice cream that accompanied the delicious tart had far too many ice crystals. So, a less enjoyable experience than previous visits, but we will return hoping to find the same quality as before... *** Update 2025 - Always a pleasure, always exquisite! *** Update 2024 - Back after a year, still just as perfect! Thank you. *** Excellent restaurant, quite honestly, we weren't expecting this level of quality 👌 Thank you, we will return because you are now our favorite restaurant in Romans.

02/05/2026: I didn't stay overnight, but I highly recommend the restaurant! The welcome and service are excellent. The food is delicious, made with fresh ingredients (vegetables, meat, fish). I thoroughly enjoyed the nougat glacé. The dining room is quiet and well-insulated, making conversation easy. After dinner there last night, we're going back today.

15/02/2026: The welcome was perfect, all the staff were exceptionally friendly. The room was beautiful, very clean, and the bedding was very comfortable. The meals offered were very good. The breakfast was very complete, with sweet and savory options, fruit, and more. If we return to the area, we will definitely stay at the Auberge de l'Abbaye de Signe.

19/04/2026: A very warm welcome and quality products. After a short hike, we stopped by for ice cream and a refreshing drink. We received a very warm welcome, and the owner even offered to take our picture as a souvenir. The ice cream was delicious, sourced from a small producer in Avignon. Thank you sincerely for this very pleasant experience.

04/04/2026: Passing through Les Sables-d'Olonne, we stopped to eat at the restaurant at the end of the quay. Top-notch restaurant. Excellent food. Top-notch service. If you're ever in Les Sables-d'Olonne, near La Chaume, you can go there without hesitation. It's at the end of the quay.

The portions are very generous — actually so big that it was hard to finish everything 😊 We ordered the set menu, fondue, and raclette, and everything was absolutely delicious and truly amazing. The service was also very friendly and welcoming, which made the whole experience even better. Highly recommended if you want authentic and hearty French alpine food! 🧀✨

05/05/2026: Positive points: The hotel is a manageable size, with relatively spacious rooms. The toilet is separate from the bathroom, which is a plus. The breakfast is good. The pool and gym are also pleasant. Negative points: We stayed for 3 days and 2 nights, and our keys were deactivated after two days without any explanation, which is incomprehensible. There is no trash can in the toilets—a first for us after many hotel stays. The hand sanitizer was not replenished, and several standard items for a 4-star hotel were missing: no glass in the bathroom, no makeup remover pads, and no usual toiletries kit. The same applies to the amenities: no umbrella or iron. Regarding water, only a small, non-returnable carafe is provided, which is inconvenient. When the manager told us that this met the “Mercure standard,” it raised questions: is this standard lower than what we expect from a 4-star hotel? If so, we will consider avoiding this chain on our future trips, as it falls far short of our expectations. We understand that significant investments may be made in wellness or spa facilities, but this should not come at the expense of basic, expected services. Finally, one particularly inconsistent point: the presence of a sticker stating “do not flush down the toilet” (with a bin supposedly available near the sink)… when, in fact, there is no bin in the toilet.
