11/12/2025: Dish of the day: sea bream with leeks. The leeks were sweet and delicious, but the dish as a whole, including the sea bream, was bland in both taste and color. It needed a light sauce and a splash of color, rather than just a green salad to complement the leeks.
The waiter mixed two bottles of wine in the same glass. A few smiles would have been welcome to brighten up the service.
04/12/2025: A must-visit! The food is as exceptional as ever and the service impeccable, just like on our previous visits. We will gladly return and highly recommend this restaurant.

14/11/2025: We don't go there anymore. For a long time, we were regulars, but a very bad experience made us change our minds for good.
One day, we had the misfortune of arriving slightly before service started: a frosty welcome, unpleasant remarks, and a very clear feeling that we were bothering them. When regular customers are treated like that, it's no wonder they don't come back.
Regulars deserve respect and pampering – otherwise, they should find another line of work.

It was a wonderful evening, everyone was delighted, the food was excellent, the setting magnificent, and the team of professionals was kind and fantastic. Laurence, Alain, and their team were wonderful ❤️. I'm so glad we held our party at Le Moulin.
I recommend it 200%!

15/02/2026: Tucked away in the old city of Carcassonne.
A very delicious meal, albeit a bit small portions (though that might just be me). We had canelloni with foie gras, followed by a super tasty steak with pepper sauce. The desserts were also delicious. We had the friendly service choose our wine, and it was absolutely perfect.

14/02/2026: The food is good and the atmosphere is very pleasant. However, the service needs improvement: I was given a dirty plate, so I asked for a replacement. The waiter went to the cutlery area, took the cloth he used to clean the tables (with chemicals), cleaned my plate with it, and brought it back to me… I'm sure the restaurant has enough plates to bring me a clean one. Fingers crossed I don't get a stomachache tonight…
