The ingredients were fresh, the service impeccable, and a special mention goes to the chef who runs the kitchen single-handedly and manages everything masterfully. The food was delicious and very reasonably priced, and the welcome was warm. We highly recommend it.

24/07/2026: A morning meeting of business leaders on a Thursday at 7:00 AM. O'Nico was up for the challenge. There weren't many of us, 13 or 14. Nicolas greeted us with a big smile and had already prepared a meeting space for us. Croissants, pain au chocolat, fruit juice, coffee... In short, everything was there. Humor and thoughtful touches too. He even put a fan in case we got hot. At 7:40 AM, the sun rose, and he lowered the blinds so we wouldn't get too hot. In short, it was really great. I had a wonderful experience meeting new people, and the place was very pleasant.

25/07/2026: An exceptional dining experience in a unique setting! ​The Discovery Menu is outstanding value for money, showcasing inventive flavor combinations crafted from fresh, high-quality local ingredients. ​A true highlight was the tomato-based starter—an extraordinary dish featuring tomato ice cream, a refreshing cold tomato soup, crisp green tomatoes from Florence, and a savory tomato cake, all beautifully layered with goat cheese. The rest of the menu matched that high standard: the tuna paired with zucchini was delicate and fresh, followed by a deeply flavorful assortment of duck varieties. ​Every dish felt like a unique piece of art on the plate, and the wine pairings were sublime. Despite being at the table for several hours, time flew by; the pacing was perfect and we were engaged throughout the entire meal. Service was equally impressive, with every course thoroughly and warmly explained in fluent English. ​To top it all off, the setting is remarkable—dining in a historic building with a creek running directly underneath adds a wonderful atmosphere to the meal. Highly recommended.

12/07/2026: Passing through Chablis for a Burgundy weekend, we discovered this wonderful restaurant. Our first fine dining experience, and it was truly memorable. We were captivated by the six-course tasting menu. Everything was perfect, from the presentation to the harmonious pairing of each dish. We also had a great rapport with Antoine, our waiter, who was delightful throughout the entire meal and clearly knows his craft. We highly recommend this restaurant, and congratulations to the chef!

14/07/2026: Delicious crepes and great service, however I would have appreciated it if the person making the crepes had worn a hairnet, hygiene-wise. I ate my crepes thinking I might get hair in them, luckily I didn't, but in all restaurants cooks have their hair covered, especially if it's long.

23/07/2026: I introduced this restaurant to friends after discovering it myself in December 2025. A warm, friendly place with a small children's area. The food is excellent for a very reasonable price: vegetable gazpacho followed by a very generous slice of salmon quiche with a green salad for €11.50. Kudos to the chef, the quiche crust was delicious! I highly recommend this place. 👍

09/07/2026: We had a fantastic dinner at this lovely wine bar/shop and restaurant. The food was outstanding and excellent value. Really inventive dishes (e.g. strawberry and tomato gazpacho for dessert with basil ice cream) that were perfectly made. It was during a heatwave and there was air conditioning inside but we chose to sit out in the lovely square. The service was fantastic, so kind and friendly. I am coeliac and there were naturally gluten free mains and desserts in the menu and the staff understood my allergy and double checked details with the kitchen which was very reassuring. Would highly recommend for an excellent dinner in Troyes.
