30/09/2026: Hands down one of the best culinary experiences we’ve had. We took a “little gem” appetizer which came with avocado ice cream (brilliant), the beef Wellington (which as everyone wrote about, is exquisite), and a cod dish with broccoli puré and cauliflower (amazing). Their orange wine is class as well. And perhaps most importantly, the staff are charming. Really, really great experience and beat our already high expectations by a mile. Also, compared to Paris, the prices were really really fair!

14/10/2026: We were 4 and asked straight for the main dishes The waiter weighted a little bit more than usual on our choice between Fish and meal talking about Fish was very expensive and trying to make us chose Meal. At the end, 2 Fish and 2 meal . We waited a long time for our dishes my friends and I which were good not exceptional simply good. We didn’t order for a desert and unfortunately having a coffee was not possible as the coffee machine was off After waiting again , the waiter came with the device to proceed to the payment who had to be divided by 4 and insisted a lot about the tip I decided not to leave a tip firstly because of the waiter behaviour She insisted again in front of my friends to make me leave a tip but it didn’t happen. She thanked deeply my friends without looking at me nor thank for coming as any waiter uses to do in any restaurant ( tip or not) . I was quite surprised about her behaviour France has a law about service in restaurant which is 15% included in the bill. A tip comes in addition depending on customer ‘s satisfaction

05/10/2026: Racist behavior and pressure to tip from a curly-haired waitress. Her service was mediocre: rushed, stressed, and unwelcoming when we arrived. When it came time to pay, she asked for a tip. When we didn't leave one, she became angry, saying that "French people tip" and that we didn't tip "because we're Chinese." She then repeatedly used the fact that we were supposedly Chinese to criticize us, even though she had never asked our nationality. She simply assumed it because we are Asian. I have lived in France for five years and I have never encountered this kind of situation. Tipping in France is optional. I urge Asian customers to be vigilant in this establishment and I hope that management will take this problem seriously and improve the quality of its service.

01/10/2026: we were feeling a little queasy after several consecutive meat-heavy meals and made a last-minute reservation here, which somehow turned into one of the most perfect meals of the trip and left me near tears. picture this: a nice little table outside on a late september night, a bottle of crispy white wine to wash down the heat of the day, and the freshest, most stunning seafood you could possibly ask for. the sea snails were my favourite, but honestly the entire meal was so delightful that i have almost no photos because i was too busy eating. it was a “razor clams too juicy, rillettes too buttery” type of experience. i left with a happy belly and a singular thought: that perhaps life is actually beautiful and maybe all i need is a bottle of white wine and an unlimited supply of sea snails.

29/09/2026: A small restaurant with a very pleasant street-side terrace (the street is pedestrianized), ideal for enjoying the (last) summer evenings. It seems the owner himself is serving, and he was very accommodating, whether it was asking for an ingredient removed from a dish or sharing a dessert. As for the food, I don't know to what extent our dishes could be considered "authentic," having seen panisses elsewhere that were rather round and being used to pissaladière with a thinner crust (I won't comment on the bouillabaisse), but it doesn't matter whether they were reinterpretations or not because everything was very good. The panisses arrived at our table piping hot and crispy-soft, accompanied by an aioli that truly tasted of garlic; they were absolutely delicious, much better than any panisses we've had in the past. The focaccia-style bread on top of the pissaladière was a wonderful complement to the red onion compote. The bouillabaisse, for its part, had a distinctly fishy flavor, and we were pleased to have been able to try this dish in a tapas-style format for a modest price compared to what other establishments charge. For dessert, the French toast, served with a scoop of vanilla ice cream and salted caramel sauce, was excellent. If we had still had room, we would have also tried the generous tiramisu that looked so tempting at the next table.

The cuisine is spot-on, combining classic ingredients with modern touches; the presentations are meticulous, and the menu structure and variety of offerings are very compelling. All this unfolds in a chic and relaxing setting, featuring soft colors and fascinating details such as archaeological remains or the unique faucet system in the restroom. In short, one senses a great deal of skill and inspiration in this White Hacienda, where everything plays on contrasts, tranquility, service, and the pleasure of both the eyes and the palate. The chef, with his resemblance to the actor Benjamin Lavernhe, even shares some of his secrets, and the hostess, Marie, brightens the meal with her smile, explanations, and convictions. In short, this discreet establishment near Albi, not far from the Toulouse-Albi expressway exits, is a must-try and a true champion of Tarn cuisine!
