29/05/2026: A family atmosphere, a very apt name for a bistro, top-notch staff and setting. The icing on the cake: the dishes come straight from the kitchen! Welcome to the far north.

Amarante
Quinze-Vingts, Paris
15/04/2026: Hearty nose-to-tail cuisine with dishes you won’t find in most French restaurants, but the service (or lack thereof) really does take away from the experience.
We went to Amarante for lunch on a weekday. Amarante specialises in traditional French cuisine, with a focus on offal.
For starters, we took the veal tongue and the pork trotters. Both dishes were relatively simple in presentation, but very well executed, especially the veal tongue which had a delicious mustard based condiment.
For mains, we took the sweetbread and the chicken. Both meats were cooked perfectly: nicely caramelised, with succulent crispy skin for the chicken and a very juicy interior. The sweetbread was very rich and melted in the mouth, though we felt it lacked a bit of salt. However it was served with a superb potato mash which had a smooth texture but a really strong potato flavour which was delicious.
For desserts, we had their dark chocolate mousse and their almond cake. Both desserts contained very little sugar which was very impressive, and had a really strong flavour of the raw ingredient (cacao and almonds). The mousse in particular was among the best we’ve had.
Purely judging on the food, this would be a 4/5. It’s simple cooking, but very well executed. The service however brings this down to a 3/5. Our waiter was quite cold, and somewhat rude at times, almost taking offense when we asked for salt for the veal sweetbread. We were also never asked whether we enjoyed certain dishes, and overall this made the experience less enjoyable.
01/04/2026: do book ahead!
loved the food. we went there for lunch and got the worker's lunch set.
we got the veal tongue and pork rillettes as starters. veal cheak and pork chop for mains. and almond cake with pear ice cream, and lemony meringue thing (which was the only thing we didn't really like)
they gave sourdough instead of baguette as the bread!
the waiter was v nice and accommodating by speaking in english with us! he recommended good red wine to pair with our meal too.

La Poule Noire
Marseille-1Er, Marseille
02/06/2026: Everything exceeded my expectations. The food was beautiful, delicious, and perfectly prepared. There wasn’t a single thing to complain about—it was an absolutely wonderful and happy evening.
31/05/2026: We were disappointed with our dinner. My friend was served a starter (poached eggs) that was unfortunately sprinkled with an overpowering spice that completely masked the flavor. My starter (cromesqui) was disappointing, a pasty, tasteless cromesqui on a bed of overly salty vegetables. My friend's main course, however, was delicious (pork ribs), and I didn't enjoy my own (lamb) either. The young man who served us was very nice. I wouldn't recommend it for the price.

Abbaye du Thoronet
Le Thoronet
16/06/2026: A beautiful monument with an interesting history
12/06/2026: The Abbaye du Thoronet is a fascinating masterpiece of medieval architecture. Nestled in the wooded hills of the Var department in Provence (southern France), it is considered, along with the abbeys of Sénanque and Silvacane, one of the three famous Cistercian sisters of Provence ("Les trois sœurs provençales").
The Architecture: The Geometry of Silence
Those entering the Abbaye du Thoronet will search in vain for opulent gold decorations or colorful stained-glass windows. The Cistercians made radical asceticism their duty.
Pure Form: The beauty of the church derives purely from its proportions, perfect geometry, and precise stonemasonry.
Light as Decoration: Since there are no wall decorations, sunlight becomes the central design element. Depending on the time of day, the incoming rays fundamentally change the atmosphere of the space.
The Cloister: It is considered one of the oldest and best-preserved in Provence. Its heavy Romanesque arches enclose a courtyard that exudes absolute tranquility.
The Magical Acoustics
An absolute highlight of the abbey church is its echo. Due to the smooth, bare stone walls and the unique shape of the vault, the space has a reverberation time of approximately 10 to 12 seconds.
Fun Fact: In the past, the monks were not allowed to speak in their daily lives. Their only form of expression was communal singing. The acoustics in the Thoronet forced the singers to sing extremely slowly and precisely – any wrong note would have mercilessly hung in the air for seconds. Even today, musicians from all over the world use this space for unique recordings.
A Brief Look at History
Founded around 1160: Construction began in the late 12th century. The monastery provided space for about 20 monks and several dozen lay brothers who worked the land.
Decline and Rescue: During the French Revolution, the monastery was abandoned and fell into ruin. However, in the 19th century, it was rediscovered by the famous writer Prosper Mérimée (then a preservationist) and painstakingly restored.
Inspiration for Modernism
Hard to believe, but this medieval monastery has profoundly influenced modern architecture. The renowned architect Le Corbusier visited Thoronet extensively in the 1950s. He was deeply impressed by how so much emotion could be evoked from pure stone, light, and shadow. His famous Sainte-Marie de la Tourette complex is directly based on the impressions he gained at Thoronet.
Conclusion: If you are ever in Provence, the Abbaye du Thoronet is an absolute must-see – even if you are not usually interested in churches. It is less a traditional museum and more a place to be experienced with all your senses.
